Macaroni Salad recipe

Ingredients

  • 2 cups elbow macaroni
  • 1/2 cup mayonnaise
  • 2 tbsp vinegar or lemon juice
  • 1 tsp mustard (optional)
  • 1/2 cup carrots (finely diced)
  • 1/2 cup bell pepper (diced)
  • 1/4 cup onion (finely chopped)
  • 2 boiled eggs (optional)
  • Salt & black pepper to taste
  • 1 tsp sugar (optional, balances flavor)

Instructions

1. Cook the Pasta

  1. Boil macaroni in salted water until soft (8–10 minutes).
  2. Drain and rinse with cold water to stop cooking.

2. Prepare Mix-ins

  1. Chop vegetables finely.
  2. Dice boiled eggs if using.

3. Make Dressing

  1. Mix mayonnaise, vinegar, mustard, salt, pepper, and sugar.

4. Combine

  1. Add pasta, veggies, and eggs to a large bowl.
  2. Pour dressing over and mix well.
  3. Adjust seasoning to taste.

Chill & Serve

  • Refrigerate for at least 1 hour before serving for best flavor.

Optional Add-Ins

  • Sweet corn 🌽
  • Pickles or relish
  • Tuna or chicken
  • Garlic powder for extra flavor

Tip

Macaroni salad tastes better after chilling—the dressing soaks into the pasta and makes it extra creamy and flavorful.
