Ingredients
- 4 catfish fillets
- 1 cup buttermilk (or milk + 1 tbsp lemon juice)
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cayenne pepper (optional)
- Salt & black pepper
- Oil for frying
Instructions
1. Soak the Fish
- Rinse catfish and pat dry.
- Soak in buttermilk for 20–30 minutes (removes strong taste and tenderizes).
2. Prepare Coating
- Mix cornmeal, flour, paprika, garlic powder, onion powder, salt, pepper, and cayenne.
3. Coat the Fish
- Remove fish from buttermilk.
- Dredge in coating mixture until fully covered.
4. Fry
- Heat oil to 175°C (350°F).
- Fry fillets for 3–5 minutes per side until golden and crispy.
- Drain on paper towels.

Tip
For extra crunch, double-coat the catfish (dip again in buttermilk, then cornmeal mix) before frying.
