catfish

Ingredients

  • 4 catfish fillets
  • 1 cup buttermilk (or milk + 1 tbsp lemon juice)
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper (optional)
  • Salt & black pepper
  • Oil for frying

Instructions

1. Soak the Fish

  1. Rinse catfish and pat dry.
  2. Soak in buttermilk for 20–30 minutes (removes strong taste and tenderizes).

2. Prepare Coating

  1. Mix cornmeal, flour, paprika, garlic powder, onion powder, salt, pepper, and cayenne.

3. Coat the Fish

  1. Remove fish from buttermilk.
  2. Dredge in coating mixture until fully covered.

4. Fry

  1. Heat oil to 175°C (350°F).
  2. Fry fillets for 3–5 minutes per side until golden and crispy.
  3. Drain on paper towels.

Serving Ideas

  • Lemon wedges 🍋
  • Fries or hush puppies
  • Coleslaw 🥗
  • Hot sauce or tartar sauce

Tip

For extra crunch, double-coat the catfish (dip again in buttermilk, then cornmeal mix) before frying.
