Ingredients
For the Filling
- 2 cups (about 450 g) mashed cooked sweet potatoes
- ½ cup (115 g) unsalted butter, melted
- ¾ cup (150 g) brown sugar
- 2 large eggs
- ½ cup (120 ml) evaporated milk
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground ginger
- ¼ tsp salt
For the Crust
- 1 unbaked 9-inch pie crust
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine the mashed sweet potatoes and melted butter.
- Whisk in the brown sugar, eggs, evaporated milk, and vanilla.
- Add cinnamon, nutmeg, ginger, and salt. Mix until smooth.
- Pour the filling into the pie crust and smooth the top.
- Bake for 45–55 minutes, or until the center is mostly set and a knife inserted near the center comes out clean.
- Cool completely before slicing. The pie will continue to set as it cools.
