Ingredients
- 4 medium russet potatoes
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 cup shredded cheddar cheese
- 2 tbsp butter
- 2 tbsp chopped green onions
- 2 tbsp sour cream (optional)
Instructions
- Prepare the potatoes
- Scrub and dry the potatoes.
- Rub with olive oil and sprinkle with salt.
- Air fry
- Preheat the air fryer to 400°F (200°C) if required.
- Air fry potatoes for 35–45 minutes, turning halfway through, until fork-tender.
- Add the cheese
- Carefully slice each potato open.
- Fluff the inside with a fork and add butter.
- Top generously with shredded cheddar cheese.
- Melt the cheese
- Return the potatoes to the air fryer for 2–3 minutes, until the cheese is melted.
- Serve
- Garnish with green onions and sour cream if desired.
