A rich, creamy chicken dinner made in one skillet with soft herb cheese, garlic, and a silky sauce.
Ingredients (4 servings)
- 4 boneless, skinless chicken breasts or thighs
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 1 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 package (about 150 g / 5 oz) Boursin cheese
- ½ cup heavy cream (optional, for an extra-creamy sauce)
- 1 cup baby spinach (optional)
- Fresh parsley for garnish
Instructions
- Season the chicken
- Pat the chicken dry and season with salt, pepper, and paprika.
- Sear
- Heat olive oil in a large skillet over medium-high heat.
- Cook chicken for 5–7 minutes per side until golden and nearly cooked through.
- Transfer to a plate.
- Make the sauce
- Reduce heat to medium.
- Add butter and garlic; cook for 30 seconds.
- Pour in the chicken broth and scrape up any browned bits.
- Stir in the Boursin cheese until melted and smooth.
- Add heavy cream if using.
- Finish
- Return the chicken to the skillet.
- Simmer for 5–7 minutes until the chicken is fully cooked and the sauce thickens slightly.
- Stir in spinach until wilted, if using.
- Serve
- Garnish with parsley and spoon extra sauce over the chicken.
