Ingredients (4 servings)

  • 4 boneless, skinless chicken breasts or thighs
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 package (about 150 g / 5 oz) Boursin cheese
  • ½ cup heavy cream (optional, for an extra-creamy sauce)
  • 1 cup baby spinach (optional)
  • Fresh parsley for garnish

Instructions

  1. Season the chicken
    • Pat the chicken dry and season with salt, pepper, and paprika.
  2. Sear
    • Heat olive oil in a large skillet over medium-high heat.
    • Cook chicken for 5–7 minutes per side until golden and nearly cooked through.
    • Transfer to a plate.
  3. Make the sauce
    • Reduce heat to medium.
    • Add butter and garlic; cook for 30 seconds.
    • Pour in the chicken broth and scrape up any browned bits.
    • Stir in the Boursin cheese until melted and smooth.
    • Add heavy cream if using.
  4. Finish
    • Return the chicken to the skillet.
    • Simmer for 5–7 minutes until the chicken is fully cooked and the sauce thickens slightly.
    • Stir in spinach until wilted, if using.
  5. Serve
    • Garnish with parsley and spoon extra sauce over the chicken.
