Lemon Bar

These bright, tangy lemon bars feature a buttery shortbread crust topped with a smooth, citrusy lemon filling. Perfect for parties, holidays, or an afternoon treat!

Ingredients

For the Crust

  • 1 cup (225g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • 2 cups (250g) all-purpose flour
  • ¼ teaspoon salt

For the Lemon Filling

  • 4 large eggs
  • 1½ cups (300g) granulated sugar
  • ¼ cup (30g) all-purpose flour
  • ⅔ cup (160ml) fresh lemon juice (about 3–4 lemons)
  • 1 tablespoon lemon zest

For Garnish

  • Powdered sugar, for dusting

Instructions

Step 1: Prepare the Crust

  1. Preheat your oven to 350°F (175°C).
  2. Grease or line a 9×13-inch baking pan with parchment paper.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Mix in the flour and salt until a soft dough forms.
  5. Press the dough evenly into the bottom of the prepared pan.
  6. Bake for 18–20 minutes, or until the edges are lightly golden.

Step 2: Make the Lemon Filling

  1. While the crust is baking, whisk together the eggs and sugar until smooth.
  2. Add the flour and whisk until fully incorporated.
  3. Stir in the lemon juice and lemon zest.

Step 3: Bake

  1. Pour the lemon filling over the hot baked crust.
  2. Return the pan to the oven and bake for 20–25 minutes, or until the center is set and no longer jiggles.

Step 4: Cool and Serve

  1. Allow the bars to cool completely at room temperature.
  2. Refrigerate for at least 2 hours for clean slices.
  3. Dust generously with powdered sugar before serving.
  4. Cut into squares and enjoy!

  • Chill thoroughly before cutting for neat, bakery-style squares.
