Boiled Fruit Cake Recipe

A rich, moist, and wonderfully flavorful boiled fruit cake packed with dried fruits and warm spices. This traditional cake is easy to make because the fruits are simmered before baking, creating a soft texture and deep, caramelized flavor.

Ingredients

For the Fruit Mixture

  • 1 cup raisins
  • 1 cup sultanas or golden raisins
  • 1 cup currants
  • ½ cup chopped dates
  • ½ cup chopped dried apricots
  • 1 cup water
  • 1 cup brown sugar
  • ½ cup unsalted butter
  • 1 teaspoon baking soda

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt

Additional Ingredients

  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts or pecans (optional)

Instructions

Step 1: Boil the Fruit

  1. In a large saucepan, combine raisins, sultanas, currants, dates, apricots, water, brown sugar, and butter.
  2. Bring the mixture to a gentle boil over medium heat.
  3. Reduce heat and simmer for 5 minutes, stirring occasionally.
  4. Remove from heat and stir in the baking soda. The mixture will foam slightly.
  5. Allow it to cool for about 20–30 minutes.

Step 2: Prepare the Batter

  1. Preheat your oven to 325°F (165°C).
  2. Grease and line an 8-inch round or loaf cake pan with parchment paper.
  3. In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, cloves, and salt.
  4. Stir the eggs and vanilla into the cooled fruit mixture.
  5. Fold in the dry ingredients until just combined.
  6. Add chopped nuts if using.

Step 3: Bake

  1. Pour the batter into the prepared pan and smooth the top.
  2. Bake for 60–75 minutes, or until a skewer inserted in the center comes out clean.
  3. If the top browns too quickly, loosely cover with foil during the final 20 minutes of baking.

Step 4: Cool

  1. Let the cake cool in the pan for 15 minutes.
  2. Transfer to a wire rack and cool completely before slicing.

Tips for the Best Boiled Fruit Cake

  • Soak the dried fruits overnight in orange juice for extra moisture and flavor.
  • The cake tastes even better the next day as the flavors develop.
  • Store in an airtight container for up to a week.
  • For a festive version, add ½ cup mixed candied peel.

Serving Suggestions

Serve slices with a cup of tea or coffee, or spread lightly with butter for a traditional treat. This cake is perfect for holidays, family gatherings, and afternoon tea.
