A rich, moist, and wonderfully flavorful boiled fruit cake packed with dried fruits and warm spices. This traditional cake is easy to make because the fruits are simmered before baking, creating a soft texture and deep, caramelized flavor.
Ingredients
For the Fruit Mixture
- 1 cup raisins
- 1 cup sultanas or golden raisins
- 1 cup currants
- ½ cup chopped dates
- ½ cup chopped dried apricots
- 1 cup water
- 1 cup brown sugar
- ½ cup unsalted butter
- 1 teaspoon baking soda
Dry Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- ¼ teaspoon salt
Additional Ingredients
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract
- ½ cup chopped walnuts or pecans (optional)
Instructions
Step 1: Boil the Fruit
- In a large saucepan, combine raisins, sultanas, currants, dates, apricots, water, brown sugar, and butter.
- Bring the mixture to a gentle boil over medium heat.
- Reduce heat and simmer for 5 minutes, stirring occasionally.
- Remove from heat and stir in the baking soda. The mixture will foam slightly.
- Allow it to cool for about 20–30 minutes.
Step 2: Prepare the Batter
- Preheat your oven to 325°F (165°C).
- Grease and line an 8-inch round or loaf cake pan with parchment paper.
- In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, cloves, and salt.
- Stir the eggs and vanilla into the cooled fruit mixture.
- Fold in the dry ingredients until just combined.
- Add chopped nuts if using.
Step 3: Bake
- Pour the batter into the prepared pan and smooth the top.
- Bake for 60–75 minutes, or until a skewer inserted in the center comes out clean.
- If the top browns too quickly, loosely cover with foil during the final 20 minutes of baking.
Step 4: Cool
- Let the cake cool in the pan for 15 minutes.
- Transfer to a wire rack and cool completely before slicing.
Tips for the Best Boiled Fruit Cake
- Soak the dried fruits overnight in orange juice for extra moisture and flavor.
- The cake tastes even better the next day as the flavors develop.
- Store in an airtight container for up to a week.
- For a festive version, add ½ cup mixed candied peel.
