Soft, fluffy, and completely gluten-free.

This gluten-free bread is light, soft, and perfect for sandwiches, toast, or enjoying warm with butter. No complicated techniques — just a simple dough that bakes into a beautifully fluffy loaf.

Ingredients

  • 2 cups gluten-free all-purpose flour blend
  • 1 cup tapioca starch or cornstarch
  • 1 tbsp sugar or honey
  • 2 tsp instant yeast
  • 1 tsp salt
  • 2 eggs
  • 1½ cups warm milk or dairy-free milk
  • 3 tbsp olive oil or melted butter
  • 1 tsp apple cider vinegar

Optional

  • Sesame or flax seeds for topping
  • 1 tsp garlic powder or herbs for extra flavor

Instructions

1. Activate & Mix

  1. In a large bowl, combine warm milk, sugar, and yeast.
  2. Let sit for 5 minutes until slightly foamy.
  3. Add eggs, oil, and vinegar.

2. Make the Dough

  1. Stir in gluten-free flour, starch, and salt.
  2. Mix until a thick, sticky batter-like dough forms.
  3. Beat for 2–3 minutes to help create structure.

3. Let It Rise

  1. Transfer dough to a greased loaf pan.
  2. Smooth the top with a wet spatula.
  3. Cover and let rise for 30–45 minutes until puffy.

4. Bake

  • Bake at 190°C (375°F) for 35–40 minutes until golden brown.

5. Cool

  • Let cool in the pan for 10 minutes.
  • Transfer to a rack and cool completely before slicing.
