Ingredients
- 2 lbs chicken wings
- 1 tbsp baking powder (not baking soda)
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and black pepper
- 1–2 tbsp olive oil
Optional Buffalo Sauce
- 1/4 cup hot sauce
- 3 tbsp melted butter
- 1 tsp honey
Instructions
- Preheat oven
Heat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
- Dry the wings
Pat wings very dry with paper towels for maximum crispiness.
- Season
Toss wings with baking powder, garlic powder, paprika, salt, pepper, and olive oil.
- Arrange on rack
Place wings in a single layer with space between them.
- Bake
Bake 45–50 minutes, flipping halfway through, until crispy and golden brown.
- Optional sauce
Mix hot sauce, butter, and honey. Toss wings in sauce or serve on the side.
- Serve hot
Great with ranch, blue cheese, celery, or fries.

- Baking powder helps dry out the skin and creates crunch.
- A wire rack allows hot air to circulate evenly.
- For extra crispiness, broil for 2–3 minutes at the end.
