Brown Butter Banana Bread

Ingredients

  • 1/2 cup (113 g) butter
  • 3 very ripe bananas, mashed
  • 2 eggs
  • 3/4 cup brown sugar
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon (optional)

Optional add-ins:

  • Dark chocolate chunks
  • Walnuts or pecans
  • Espresso powder
  • Sea salt on top

How to Make It

1. Brown the butter

Melt butter in a saucepan over medium heat.

Cook until it foams, then turns golden brown and smells nutty. Stir often so the milk solids don’t burn.

You’re looking for:

  • amber color
  • toasted aroma
  • brown specks at the bottom

Let cool slightly.

2. Mix wet ingredients

Whisk together:

  • browned butter
  • mashed bananas
  • eggs
  • brown sugar
  • vanilla

3. Add dry ingredients

Fold in:

  • flour
  • baking soda
  • salt
  • cinnamon

Do not overmix.

4. Bake

Pour into a greased loaf pan.

Bake at:

  • 350°F / 175°C
  • about 50–60 minutes

A toothpick should come out with a few moist crumbs.


Tips

  • The riper the bananas, the better.
  • Let it rest 15 minutes before slicing.
  • Brown butter + dark chocolate is especially good.
