Ingredients (Serves 6–8)
- 1 lb (450 g) ground beef
- 1 packet taco seasoning
- ½ cup water
- 1 large head lettuce, chopped
- 2 tomatoes, diced
- 1 cup shredded cheddar cheese
- 1 can (15 oz / 425 g) kidney beans, drained and rinsed (optional)
- 1 cup corn kernels (optional)
- 1 small red onion, diced
- 1 bag (9–10 oz) Nacho Cheese Doritos, lightly crushed
Dressing
- 1 cup Catalina dressing (or French dressing)
- ½ cup sour cream (optional, for a creamier dressing)
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Add the taco seasoning and water. Simmer for 3–5 minutes until thickened.
- Let the meat cool slightly.
- In a large bowl, combine the lettuce, tomatoes, cheese, beans, corn, and onion.
- Add the seasoned beef and toss gently.
- Stir together the Catalina dressing and sour cream if using.
- Just before serving, add the crushed Doritos and dressing.
- Toss everything together and serve immediately.
Tips
- Add sliced black olives, jalapeños, or avocado for extra flavor.
- Wait until the last minute to add the Doritos so they stay crunchy.
- Ground turkey can be substituted for beef.
