Ingredients
- 1.5–2 kg pork ribs
- 1–2 tbsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp brown sugar
- 1–2 tbsp oil
BBQ Sauce
- 1 cup BBQ sauce
- 2 tbsp honey or brown sugar
- 1 tbsp apple cider vinegar (or lemon juice)
- 1 tsp Worcestershire sauce (optional)
- 1/2 tsp chili flakes (optional)
Instructions
1. Prep the Ribs
- Preheat oven to 150–160°C (300–320°F).
- Remove the thin membrane from the back of the ribs.
- Rub ribs with salt, pepper, paprika, garlic powder, onion powder, and brown sugar.
- Let sit for 15–30 minutes if possible.
2. Slow Bake (Tender Step)
- Wrap ribs tightly in foil (add a splash of water or apple juice inside for moisture).
- Place on a baking tray.
- Bake for 2.5–3 hours until very tender.
3. Add BBQ Sauce
- Mix all BBQ sauce ingredients in a bowl.
- Remove ribs from foil.
- Brush generously with sauce.
4. Caramelize
- Increase oven to 220°C (425°F).
- Bake uncovered for 10–15 minutes.
- Brush again halfway for a sticky glaze.

Tip
For “grandpa-style” flavor, don’t rush the slow bake—that low heat is what makes the ribs fall-off-the-bone tender.
