Lightly toasted tomato & fresh cheese sangwich

This lightly toasted tomato and fresh cheese sandwich is simple, juicy, creamy, and packed with fresh flavor. Perfect for breakfast, lunch, or a quick comforting snack.

Ingredients

  • 4 slices bread
  • 1–2 fresh tomatoes, sliced
  • 150 g fresh mozzarella, feta, or soft cheese
  • 2 tbsp butter or olive oil
  • Salt and black pepper
  • Fresh basil or parsley (optional)

Optional Extras

  • Chili flakes
  • Pesto
  • Garlic butter
  • Balsamic glaze

Instructions

1. Prepare the Filling

  1. Slice tomatoes and cheese evenly.
  2. Pat tomatoes dry slightly to avoid sogginess.
  3. Season lightly with salt and pepper.

2. Assemble the Sandwich

  1. Butter one side of each bread slice.
  2. Layer cheese and tomato between the bread slices.
  3. Add herbs or pesto if desired.

3. Toast

  1. Heat a skillet or sandwich press over medium heat.
  2. Toast sandwich for 2–4 minutes per side until:
    • Bread is golden
    • Cheese softens and melts slightly

4. Serve

Serve warm with:

  • Soup
  • Chips
  • Salad
  • Hot tea or coffee
