Ingredients
- 4–5 medium potatoes
- 2–3 boiled eggs (optional but common)
- 1/2 cup mayonnaise
- 1 tbsp mustard
- 1/4 cup onion (finely chopped)
- 2–3 tbsp pickles or relish (optional)
- Salt & black pepper
- 1 tbsp vinegar or lemon juice
- Fresh parsley or dill (optional)
Instructions
1. Boil the Potatoes
- Peel and cut potatoes into cubes.
- Boil in salted water for 10–15 minutes until tender.
- Drain and let cool.
2. Prep the Mix
- Chop boiled eggs (if using).
- Finely chop onion and pickles.
3. Make the Dressing
- Mix mayonnaise, mustard, vinegar, salt, and pepper in a bowl.
4. Combine
- Add cooled potatoes, eggs, onion, and pickles.
- Gently mix so potatoes don’t mash too much.
- Taste and adjust seasoning.
Chill & Serve
- Refrigerate for at least 1 hour before serving (best flavor).
Optional Add-Ins
- Celery for crunch
- Paprika on top
- Bacon bits
- Sweet corn
Tip
Letting it rest in the fridge makes the flavor much better—the potatoes soak up the dressing and taste richer.
