potato salad

Ingredients

  • 4–5 medium potatoes
  • 2–3 boiled eggs (optional but common)
  • 1/2 cup mayonnaise
  • 1 tbsp mustard
  • 1/4 cup onion (finely chopped)
  • 2–3 tbsp pickles or relish (optional)
  • Salt & black pepper
  • 1 tbsp vinegar or lemon juice
  • Fresh parsley or dill (optional)

Instructions

1. Boil the Potatoes

  1. Peel and cut potatoes into cubes.
  2. Boil in salted water for 10–15 minutes until tender.
  3. Drain and let cool.

2. Prep the Mix

  1. Chop boiled eggs (if using).
  2. Finely chop onion and pickles.

3. Make the Dressing

  1. Mix mayonnaise, mustard, vinegar, salt, and pepper in a bowl.

4. Combine

  1. Add cooled potatoes, eggs, onion, and pickles.
  2. Gently mix so potatoes don’t mash too much.
  3. Taste and adjust seasoning.

Chill & Serve

  • Refrigerate for at least 1 hour before serving (best flavor).

Optional Add-Ins

  • Celery for crunch
  • Paprika on top
  • Bacon bits
  • Sweet corn

Tip

Letting it rest in the fridge makes the flavor much better—the potatoes soak up the dressing and taste richer.
