- 1–1½ cups shredded cheddar cheese
- 1–2 tbsp sugar-free ketchup or mayo (optional)

- 1 cup shredded mozzarella or cheddar (per quesadilla)
Instructions
1. Cook the Beef
- Heat pan with butter or oil.
- Cook onion (if using) until soft.
- Add ground beef and break it up finely.
- Season with salt, pepper, garlic powder, paprika, and mustard.
- Cook until browned and juicy.
2. Make the Keto Cheese “Wrap”
- Heat a nonstick pan.
- Spread shredded cheese into a thin circle.
- Let it melt and bubble until edges crisp slightly.
- Carefully loosen it—this becomes your tortilla.
3. Assemble
- Add cooked beef onto one half of the cheese shell.
- Add extra cheddar on top.
- Fold in half like a quesadilla.
4. Crisp It
- Return to pan for 1–2 minutes per side.
- Cook until golden and crispy.
