Ingredients

Chicken

  • 4 large chicken breasts

Spinach Artichoke Filling

  • 1 cup spinach (fresh, chopped) or 1/2 cup frozen (thawed & drained)
  • 1/2 cup artichoke hearts, chopped
  • 4 oz cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon chili flakes (optional)
  • Salt & pepper to taste

Ingredient Notes

  • Cream cheese: Makes the filling rich and creamy.
  • Spinach: Must be well-drained to avoid watery filling.
  • Artichokes: Add tangy, savory depth.
  • Chicken breasts: Choose thick pieces for easier stuffing.

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a bowl, mix spinach, artichokes, cream cheese, mozzarella, Parmesan, garlic, salt, pepper, and chili flakes.
  3. Cut a pocket into each chicken breast (do not slice all the way through).
  4. Stuff each chicken breast with the spinach-artichoke mixture. Secure with toothpicks.
  5. Season outside of chicken with salt, pepper, paprika, and garlic powder.
  6. Heat olive oil in a skillet and sear chicken 2–3 minutes per side until golden.
  7. Transfer to baking dish and bake for 20–25 minutes, until internal temp reaches 165°F (74°C).
  8. Rest for 5 minutes before serving. Remove toothpicks and serve hot.
