Walking Taco Casserole is a fun, baked version of the classic “walking taco.” It has layers of seasoned beef, cheese, corn, and crunchy chips baked together into a cheesy, savory casserole. It’s easy, family-friendly, and perfect for parties, potlucks, or busy weeknights.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/3 cup water

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 3–4 cups tortilla chips, lightly crushed
  • 1/2 cup sour cream (for topping)
  • 1/2 cup diced tomatoes (optional)
  • 1/4 cup sliced green onions (optional)

Ingredient Notes

  • Tortilla chips: Add crunch—don’t crush too fine or they’ll get soggy.
  • Taco seasoning: Gives classic Tex-Mex flavor.
  • Cheese: Sharp cheddar melts best for richness.
  • Salsa: Adds moisture and spice to the base layer.

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook ground beef over medium heat until browned.
  3. Drain excess fat. Add taco seasoning and water; simmer 2–3 minutes.
  4. Stir in corn, black beans, and salsa. Mix well.
  5. Spread beef mixture evenly into a 9×13 baking dish.
  6. Sprinkle shredded cheese over the top.
  7. Bake for 15–20 minutes until cheese is melted and bubbly.
  8. Remove from oven and let cool slightly.
  9. Top with crushed tortilla chips, sour cream, tomatoes, and green onions.
  10. Serve warm.
