Ingredients
For the Sweet Potatoes
- 2 large sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt & black pepper
Garlic Feta Cream
- 1 cup feta cheese
- 2–3 tbsp yogurt or cream cheese
- 1 garlic clove
- 1 tbsp lemon juice
Pomegranate-Hot Honey
- 3 tbsp honey
- 1 tsp chili flakes or hot sauce
- 2 tbsp pomegranate seeds
Instructions
Roast the Sweet Potatoes
- Preheat oven to 220°C (425°F).
- Toss sweet potato cubes with oil and seasonings.
- Spread on a baking tray in a single layer.
- Roast for 25–30 minutes, flipping halfway, until crispy.
Make the Garlic Feta Cream
- Blend feta, yogurt, garlic, and lemon juice until creamy.
- Add a splash of water if needed for smoothness.
Prepare the Hot Honey
- Warm honey slightly.
- Stir in chili flakes and pomegranate seeds.
Assemble
- Spread garlic feta cream on a plate.
- Add crispy sweet potato cubes on top.
- Drizzle with pomegranate-hot honey.
