Ingredients
Chicken
- 2 large chicken breasts
- Salt & black pepper
- 1 tsp paprika
- 1 tbsp olive oil
Filling
- 1 cup mushrooms, chopped
- 2 garlic cloves, minced
- 1 tbsp butter
- 1 cup mozzarella cheese
- 2 tbsp cream cheese (optional)
- Fresh parsley
Instructions
Prepare the Filling
- Heat butter in a pan.
- Cook mushrooms until browned.
- Add garlic and cook 1 minute.
- Remove from heat and mix with mozzarella and cream cheese.
Stuff the Chicken
- Slice a pocket into each chicken breast.
- Season chicken with salt, pepper, and paprika.
- Fill each pocket with the mushroom-cheese mixture.
- Secure with toothpicks if needed.
Cook
- Heat oil in a skillet over medium heat.
- Sear chicken 4–5 minutes per side until golden.
- Cover and cook until fully done, or finish in oven at 190°C (375°F) for 10–15 minutes.
Garlic Butter Finish
Melt a little butter with garlic and spoon over the chicken before serving.
