Carnivore Chilled Custard Bites are a simple, low-carb treat made primarily from animal-based ingredients. Once chilled, the custard firms up enough to cut into bite-sized pieces.
Ingredients
- 6 large eggs
- 1 cup (240 ml) heavy cream
- 2 tbsp melted butter
- 1 tsp vanilla extract (optional, if your carnivore approach allows it)
- Pinch of salt
Instructions
- Preheat the oven to 325°F (165°C).
- Whisk together the eggs, heavy cream, melted butter, vanilla (if using), and salt until smooth.
- Pour the mixture into a lightly buttered 8-inch (20 cm) square baking dish.
- Place the dish in a larger pan and add hot water to the outer pan to create a water bath.
- Bake for 35–45 minutes, until the custard is set but still slightly jiggly in the center.
- Remove from the water bath and cool to room temperature.
- Refrigerate for at least 4 hours or overnight.
- Cut into squares or bite-sized cubes and serve chilled.
Optional Variations
- Add a little extra butter for a richer texture.
- Use browned butter for a deeper flavor.
- Top with a small dollop of whipped heavy cream before serving.
Storage
- Refrigerate in an airtight container for up to 4 days.
- Best served cold, straight from the refrigerator.
These bites have a smooth, creamy texture similar to a firm egg custard, making them a popular dessert-style option for people following a strict carnivore or very low-carb diet.
