Ingredients
- 4 medium potatoes
- 2 tbsp olive oil or butter
- Salt & black pepper
- 1 cup shredded cheddar cheese (or mix cheeses)
- 2–3 tbsp milk or cream
- 2 tbsp butter
- Optional toppings: sour cream, spring onions, bacon bits, chili flakes
Instructions
1. Bake the Potatoes
- Preheat oven to 200°C (400°F).
- Wash potatoes and prick with a fork.
- Rub with oil and sprinkle salt.
- Bake for 45–60 minutes until soft inside.
2. Make Them Cheesy
Option A: Simple Loaded Style
- Cut baked potatoes open.
- Fluff the inside with a fork.
- Add butter, milk, salt, pepper, and cheese.
- Mix lightly inside the skin.
- Top with extra cheese and return to oven for 5–10 minutes.
Option B: Twice-Baked Style
- Scoop out potato flesh into a bowl.
- Mix with butter, milk, cheese, salt, and pepper.
- Spoon back into skins.
- Top with more cheese and bake again for 10–15 minutes.

Tip
