Slow Cooker Beef in Onion Gravy

Ingredients

  • 2 lbs (900 g) beef chuck or stew meat
  • 1 large onion, sliced
  • 2 tbsp flour
  • 2 tbsp butter or oil
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • Salt & black pepper

Optional:

  • Mushrooms
  • Fresh thyme
  • Splash of cream at the end

Method

1. Brown the beef

Season beef with salt and pepper.

Dust lightly with flour.

Sear in a hot pan until browned.

2. Build the slow cooker

Add:

  • sliced onions
  • browned beef
  • broth
  • Worcestershire
  • garlic powder

Cook on:

  • LOW for 7–8 hours
    or
  • HIGH for 4–5 hours

    3. Finish the gravy

    If needed, thicken with:

    • 1 tbsp cornstarch + water slurry

    Stir in at the end and cook 10 more minutes.

    4. Serve

    Best with:

    • mashed potatoes
    • egg noodles
    • rice
    • crusty bread

    Flavor Upgrades

    • Add caramelized onions for extra depth
    • Stir in sour cream for a stroganoff-style twist
    • Add mushrooms and thyme
    • Use red wine in place of part of the broth
